I've just finished reading Perdido Street Station by China Mieville, which I highly recommend. In this sweeping story the plot twists have twists and the variety of races and characters breaks the mold of typical fantasy stories. Mieville's style is certainly unique: his writing is colourful, grimy, descriptive and expansive almost as though he were painting with words. Two other writers I like who have distinctive styles are William Gibson and William S Burroughs. Mieville might just be writing at the intersection of The Sprawl and Interzone.
